Insalate di Cavalo Nero con Zucca Delicata | Black Kale Salad with Delicata Squash
Perhaps the sweetest, most delicate variety of kale, Cavalo Nero is toothsome and packed full of flavour. We prepare our Insalate di Cavalo Nero by blanching and flash-sautéing the finely sliced kale leaves, and dressing them with a Sherry vinaigrette while still warm. Added sweetness comes in the form of oven-roasted Delicata squash, balancing out the kale’s pleasant bitterness. Tossed with Pecorino Romano cheese and pomegranate & pumpkin seeds. A simple, vibrant salad that lets the kale — shine.
