RISOTTO AL NERO DI SEPPIA

Talk about being dramatic. Headlining the December Specials is our spellbinding Squid Ink Risotto — a creamy (yet perfectly al dente) risotto that delivers on looks and — deep sea flavour! Tender squid cooked in its own ink (and our house-made dashi) topped with seared sea scallops, argentine prawns and generous shavings of bottarga. It’s a seafood indulgence that tastes as dramatic as it looks. Novo promise!







NEW WINE

Made predominantly from the Negroamaro grape variety, the Paololeo Salice Salentino is a Puglian wine by fourth-generation Cantine Paololeo. This round and full-bodied wine boasts a pronounced bouquet of black fruits and black pepper, with hints of licorice and vanilla, with a lingering finish of blackcurrant and spices. Selected to pair perfectly with all Novo December Specials.
